A gluten-free, low-carb flatbread that uses nothing but chia seeds in place of flour. The seeds soak up the water into a gel that cooks into a thin sheet in the pan. The center takes a long time to set and the flavor is sesame-like and slightly bitter, so it suits patient cooks.

Method

  1. Mix the chia seeds, water and salt (if using) in a bowl.

  2. Let it sit for about 10 minutes until it turns into a gel.

  3. Brush a non-stick pan with a very thin layer of oil.

  4. Pour the chia gel into the pan in a thin, even layer.

  5. Cook over low heat until the underside has firmed up well.

  6. Carefully flip it and cook the other side.

  7. Cut the cooked flatbread to size with scissors and fill it however you like.
