A flour-free, egg-free sandwich bread or flatbread alternative with only three ingredients. The inside turns soft and puffy, while the flavor is very neutral. It costs next to nothing, but the soft batter makes flipping slow and fiddly.

Method

  1. Put the oats, chia seeds and water in a blender.

  2. Blend into a thick, pourable batter.

  3. Heat a non-stick pan.

  4. Pour in part of the batter and cook until the bottom is fully set.

  5. Carefully flip the bread; the first flip is the trickiest.

  6. Cook the other side, flipping once more if needed so the center cooks through.

  7. Repeat with the remaining batter.

Tips

  • The bread tends to tear on the first flip, so wait until the underside is completely set.
  • Since the bread tastes quite plain, a flavorful filling makes a big difference.
