A pizza with no flour or dough, where the crust is made entirely from chicken. The base bakes firm and golden, so it holds together when sliced and feels surprisingly like the real thing. A filling choice for low-carb and gluten-free eaters.

Method

  1. Set the oven to 190 °C and line a baking tray with parchment paper.

  2. If your chicken breast isn't already minced, pulse it in a food processor.

  3. In a large bowl, mix the minced chicken, eggs, mozzarella and spices until fully combined.

  4. Spread the mixture on the tray into a thin, even crust.

  5. Bake for about 25 minutes until the crust is firm and browned.

  6. Remove it from the oven, let it rest for 5 minutes and raise the temperature to 200 °C.

  7. Spread the pizza sauce over the crust, then add the cheese and other toppings.

  8. Return to the oven for 10–15 minutes until the cheese melts and browns.

  9. Let it cool slightly, then slice and serve.

Tips

  • No pizza sauce? Thin some tomato paste with water and season it with black pepper, cumin and salt.
  • This is very filling; for a smaller pizza, use 250 g of chicken, which still nearly covers a full tray.
  • A manual chopper works for mincing the chicken if you don't have an electric food processor.
