An easy way to get crispy nuggets without breading or deep frying. In the oven the rice paper turns into a thin, crunchy shell while the filling stays juicy. A good fit if you want a low-fat, high-protein snack or main.
Method
Mince the chicken breast in a food processor.
Season with salt, black pepper and any spices you like, and mix well.
Dip the rice paper sheets in water one at a time and let them soften.
Spoon the chicken mixture into a piping bag.
Pipe a line of filling onto each sheet and roll it up like a börek, sealing the ends.
Cut the rolls into bite-sized pieces with scissors and arrange them on a baking tray.
Mist the tops with a little cooking spray for extra crunch.
Bake at 200 °C for 20-30 minutes, until they are as golden as you like.

- Don't skip the oil spray before baking; it was forgotten in the video.
- A dip made with Greek yogurt goes well alongside.
