A surprisingly delicious chocolate chip cookie that uses chickpeas instead of flour. Peanut butter brings both flavor and structure, and you can't taste the chickpeas at all. Soft inside with lightly golden edges, they're a good choice for a more balanced treat.

Method

  1. Preheat the oven to 175 °C and line a tray with parchment paper.

  2. Put the chickpeas, peanut butter, honey, vanilla extract, baking powder and salt in a blender or food processor.

  3. Blend until completely smooth, scraping down the sides as needed.

  4. Stir in the dark chocolate chips with a spoon.

  5. Using a spoon, divide the sticky dough into 6 equal portions on the tray and flatten them slightly.

  6. Bake for 10–12 minutes, until the edges are golden and the tops are set.

  7. Leave them on the tray for at least 10 minutes to firm up.

Tips

  • The dough is very sticky, so use a spoon to portion it.
  • The cookies don't spread much, so press them flat with a fork before or partway through baking.
  • They are very soft straight out of the oven; wait 10–15 minutes before moving them.

FAQ

Do chickpea cookies taste like chickpeas?

Not noticeably. In the video they were a big hit and the result was described as a real surprise.

What can I use instead of honey?

Maple syrup works in the same amount.

Why are my cookies so soft?

That's normal while they're warm. They firm up after resting on the tray for at least 10 minutes.
