A take on the classic party potato salad, made with oven-roasted potatoes and sweet caramelized onions. Strained yogurt, mustard and honey give the dressing a creamy, tangy-sweet flavor. It's energy-dense, so it works as a filling meal or a sharing side.

Method

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.

  2. Peel the potatoes and cut them into cubes.

  3. Toss the potatoes with olive oil and spread them on the tray in a single layer.

  4. Roast for 20–25 minutes, until tender and lightly golden.

  5. Meanwhile, thinly slice the onions and cook them in olive oil over low to medium heat until caramelized.

  6. Crush the garlic, finely chop the herbs and stir all the dressing ingredients together in a bowl until smooth.

  7. Transfer the roasted potatoes to a serving dish.

  8. Top with the caramelized onions first, then the dressing.

  9. Toss gently and serve.

Tips

  • Add 300–400 g of shredded cooked chicken to turn it into a higher-protein meal.
  • Adding 100 g of broccoli and 100 g of cauliflower brings extra volume and fiber.
  • Don't rush the onions; the caramelized flavor only develops over low heat.
