A colorful spin on classic kısır, the Turkish bulgur salad, with a pronounced sweet-and-sour balance from beetroot and pomegranate. The bulgur absorbs the beet cooking liquid and turns a vivid pink-purple. Fresh and high in fiber, it makes a great side for chicken and rice or tuna.
Method
Peel the beetroots and cut them into small cubes.
Boil the beets briefly so they still have some bite.
Put the bulgur in a large bowl, pour over the hot beet cooking water and leave it to soften.
Seed the pomegranates and finely chop the parsley, dill and green onions.
Combine the beets, pomegranate seeds and herbs in a separate bowl.
Season with plenty of lemon juice, salt and your choice of spices.
Fold this mixture into the bulgur, add the olive oil and mix well.
