Creamy quark meets the lightly charred flavor of roasted vegetables in this snack, and the crisp tortilla chips are made for dipping. It is high in protein and low in fat, good for athletes and anyone after a light snack. It also keeps well enough to spread over a few days.

Method

  1. Heat the oven to 180 °C.

  2. Dice the zucchini, eggplant and red pepper small, spread them on a tray and roast until browned.

  3. Grate the carrots or pulse them in a food processor.

  4. Heat the olive oil in a pan, sauté the garlic briefly, then add the carrots and cook until they soften.

  5. Cut the tortilla into small triangles and spread them out on a tray.

  6. Bake the triangles at 180 °C for 7–10 minutes, until colored and crisp.

  7. Put the quark in a bowl and stir in the carrots, roasted vegetables, salt and spices.

  8. Serve the dip with the tortilla chips.

Tips

  • Do not leave the tortilla triangles in for more than 10 minutes, as they can burn quickly.
  • Lightly browning the vegetables in the oven gives the dip more flavor; season the quark with any spices you like.
