A high-protein cheesecake sweetened only with apples, with no refined sugar. The texture is dense like a classic cheesecake, lightly golden on top and soft inside. A berry sauce makes a real difference to the flavor.

Method

  1. Preheat the oven to 180 °C and line a baking dish with parchment paper.

  2. Purée the apples in a food processor.

  3. Put the apple purée, eggs, yogurt and lor cheese in a blender.

  4. Blend until completely smooth.

  5. Pour into the prepared dish and level the top.

  6. Bake until the top is golden and slightly cracked.

  7. Let the cheesecake cool completely, then slice it.

  8. Make a berry sauce from the blackberries and blueberries, add honey if you like, and spoon it over the slices to serve.

Tips

  • Don't skip the berry sauce; that's where the cheesecake really comes alive.
  • For a chocolate version, melt the chocolate and pour it over the top rather than mixing it into the batter.
  • A little cinnamon in the batter brings out the apple flavor.

FAQ

What is the texture like?

Dense, similar to a classic cheesecake, with a lightly golden top and a soft center.

Can I add chocolate?

Yes, but it doesn't work well mixed into the batter. Melt it and pour it over the baked cheesecake instead.
