A simple two-ingredient cookie experiment with no flour and no added sugar. The texture is soft rather than crisp, and all the sweetness comes from the persimmon. Coconut dominates the flavor, so it makes sense to try a small batch first.

Method

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.

  2. Blend the persimmons into a smooth purée.

  3. Transfer the purée to a bowl and add the coconut gradually, mixing until it forms a dough.

  4. Divide the dough into equal pieces, roll them into balls and flatten them slightly.

  5. Place the cookies on the tray and press a few chocolate chips on top if you like.

  6. Bake for about 10–20 minutes, until the tops are golden.

  7. Let the cookies cool a little before serving.

Tips

  • If you're not sure you'll like them, make a small batch first.
  • Dipping the cookies halfway in melted chocolate improves the flavor noticeably, though it also adds calories.
