A take on Turkish poğaça that swaps white flour for oat flour and packs in cheese and fresh dill. The dough doesn't stick to your hands, so shaping is easy, and the rolls stay soft inside. Good with tea or as a post-workout snack.

Method

  1. Preheat the oven to 180–190 °C and line a baking tray with parchment paper.

  2. Put the oat flour, egg, yogurt and baking powder in a large bowl.

  3. Add the grated mozzarella, chopped dill and salt.

  4. Knead until you have a cohesive dough that no longer sticks to your hands.

  5. Pinch off pieces, shape them into rolls and arrange them on the tray with space in between.

  6. Brush the tops with egg yolk and sprinkle with sesame seeds.

  7. Bake for 20–30 minutes until golden, checking them toward the end.

Tips

  • No oat flour on hand? Blend rolled oats until they turn into a fine flour.
  • Grated kashar cheese can replace the mozzarella in the same amount.
  • If you make rolls of different sizes, check the small ones earlier so they don't burn.

FAQ

Can I use kashar cheese instead of mozzarella?

Yes, the recipe works with either; use the same 200 g.

How many rolls does this make?

About 10 medium-sized rolls.
