A lighter, oven-baked take on deep-fried chicken croquettes. Potato and cheese keep the balls soft and filling, and a final blast of high heat gives them a lightly crisp outside. With protein, carbs and fat in one bite, they're handy for athletes and meal prep.
Method
Boil the chicken breast and potatoes separately, then let them cool a little.
Mash the potatoes in a bowl and shred the chicken into it.
Add the egg, grated kashar, olive oil and breadcrumbs.
Knead into a smooth, even mixture.
Roll the mixture into walnut-sized balls.
Arrange them on a tray lined with baking paper.
Bake in a preheated 190 °C oven for 20 minutes.
Raise the heat to 220 °C and bake for another 5–10 minutes, until golden.

- Once cooked, wrap the balls in baking paper and pack them in a bag to take with you.
FAQ
