A single-serving, protein-packed take on the classic Basque cheesecake. High-protein yogurt stands in for cream cheese, so the result is lighter yet still filling. The runny chocolate on top handles a sweet craving while adding to your daily protein goal.

Method

  1. Preheat the oven to 180 °C.

  2. Put the protein yogurt, egg, lemon juice and sweetener in a deep bowl.

  3. Whisk until smooth and evenly combined.

  4. Pour the mixture into a small baking dish.

  5. Bake for about 15–20 minutes, until the top puffs up and starts to crack.

  6. Take it out and let it come to room temperature.

  7. Meanwhile, melt the chocolate over a water bath or in the microwave.

  8. Pour the melted chocolate over the cheesecake and serve.

Tips

  • For the classic burnt top, switch the oven to the top grill only for the last 2–3 minutes.
  • The original recipe is made in an air fryer, so you can use one instead of the oven.
  • If you don't have a flavored sweetener, half a packet of vanillin works instead.
