A tiramisu-inspired dessert that swaps ladyfingers and mascarpone for a coffee custard base and a light chocolate cream. The base cooks on the stove in under 15 minutes, with no refined sugar. Make a big tray and spread it out over a few days if you like.

Method

  1. In a pot, whisk the milk, water, cornstarch, egg yolk and coffee together before turning on the heat, until no lumps remain.

  2. Turn on the heat and cook, stirring constantly, until it just starts to boil.

  3. Pour the thickened custard into a serving dish and chill it in the fridge.

  4. For the cream, melt the sugar-free chocolate in a medium bowl over a water bath.

  5. Add the protein yogurt and labneh and stir until smooth.

  6. Spread the cream over the chilled base.

  7. Dust with cocoa and serve.
