With just three ingredients and no refined sugar, you can make real dark chocolate at home. Stir in crumbled buckwheat puffs and hazelnuts and it becomes a crunchy wafer bar. It also makes a nice homemade gift for special occasions.

Method

  1. Melt the cocoa mass and cocoa butter together over medium heat.

  2. Remove from the heat and let it cool to 30–35 °C, just above room temperature.

  3. Add the carob molasses and stir well.

  4. For the wafer version, crumble in the buckwheat puffs and, if you like, some chopped hazelnuts.

  5. Pour the mixture into molds.

  6. Freeze for a quick set, or refrigerate overnight for a firmer, fully set texture.

  7. Pop the chocolate out of the molds and serve.

Tips

  • Don't overheat the mixture; if it gets too hot, the chocolate will seize and lose its structure.
  • Add the carob molasses only once the mixture has cooled to 30–35 °C.
