A light, elegant dessert for anyone who'd like to eat their coffee with a spoon. The jelly is wobbly and full of coffee flavor, while the labneh cream on top adds a softness similar to condensed milk. It's nice enough to serve to guests.
Method
Put the instant coffee, carob molasses and gelatin in a large bowl.
Pour in the boiling water and stir until the gelatin has fully dissolved.
Divide the mixture among glasses.
Let it cool to room temperature, then refrigerate for at least 4 hours.
For the cream, mix the labneh with the carob molasses.
Add milk a little at a time until it reaches a pourable, medium-thick consistency.
Spoon the cream over the set jellies.
Grate cocoa mass over the top and serve.

- If you don't like strong coffee, use less; even a teaspoon gives plenty of flavor.
