A simple chocolate made at home with real cocoa butter and cocoa mass, as an alternative to sugary store-bought bars. Honey and carob flour provide the sweetness, with no additives. The texture comes out just right and it doesn't melt easily.

Method

  1. Boil water in a kettle and pour it into a wide bowl.

  2. Weigh the cocoa mass and cocoa butter into a heatproof bowl and set it over the hot water.

  3. Stir until melted; the mixture should be warm but never hot enough to burn your hand.

  4. Add the honey and carob flour to the melted mixture.

  5. Stir until completely smooth.

  6. Pour the mixture into chocolate molds.

  7. For a quick set, put the molds in the freezer for about 30 minutes.

Tips

  • Never let any water get into the melted mixture, or the chocolate will seize.
  • Check the temperature by touching the bowl: it shouldn't burn your hand.
  • Leaving the chocolate in the fridge for a day instead of the freezer gives a much firmer bar.
