A light cocoa muffin with a one-bowl batter that couldn't be easier. The star is the creamy frosting made by stirring protein yogurt into melted chocolate, which works on plenty of other healthy desserts too. If you don't want to fill individual cups, bake the same batter as a single cake.

Method

  1. Preheat the oven to 200 °C.

  2. Whisk the milk, whole wheat flour, egg, cocoa and baking powder in a bowl until smooth, adding a little cinnamon if you like.

  3. Divide the batter among muffin cups, or pour it into a single dish lined with baking paper.

  4. Bake muffins for about 10 minutes, or a single cake for 15–20 minutes, until risen.

  5. Meanwhile, melt the chocolate over a double boiler.

  6. Take it off the heat, add the protein yogurt and stir quickly.

  7. Once the cake has cooled slightly, turn it out and spread the frosting on top; sprinkle with coconut if you like.
