A practical way to make chicken doner at home, so you know exactly what goes into it. You prepare the roll once and keep it in the freezer, which means a hot meal is only minutes away on busy days. Great for working people, families and anyone packing lunches.
Method
Prepare the onion and garlic and place the chicken thighs in a large bowl.
Add the onion, garlic, salt, black pepper, tomato paste, yogurt and olive oil and mix everything in well.
Stack the chicken pieces on a sheet of cling film and wrap them tightly into a log.
Chill the log in the fridge for about 2 hours.
Move it to the freezer and leave it until frozen solid, for example overnight.
When you want to cook, take the log out without thawing and cut thin slices with a sharp, heavy knife.
Cook the slices in a hot pan for about 5 minutes, turning them now and then.
Rewrap the rest of the log and return it to the freezer straight away.
