A light chocolate pudding that thickens with nothing but hot water, no milk required. It sets almost instantly when the hot water goes in while the blender is running. Enjoy it on its own or spread it over brownies or cake as a topping.
Method
Put the cocoa, cornstarch, erythritol and cinnamon in the blender.
For the protein version, use the protein powder instead of the sweetener.
Turn the blender on and slowly pour in the hot water while it runs.
Stop adding water once it reaches the thickness you want.
Divide the pudding among bowls.
Chill in the fridge for 10–20 minutes, then serve.

- The protein version turns runny if you add too much water, so pour gradually.
- Spread it over brownies or cake to use it as a chocolate topping.
